Where do the holes come from? The Science of Bread.

We wanted to know how the holes got into bread so we watched Maisie making a loaf of bread ‘Yummy Good for your Tummy Bread’ and then made some ourselves.

Watching the yeast fermenting and producing all those tiny bubbles is fascinating and children love to have a go kneading the bread dough.

Using fresh yeast to do this makes the science behind bread making much clearer.

After producing a really delicious loaf of bread using Maisie’s instructions we looked at the conditions needed for the yeast to work.

This is what we did:

We put the same amount of yeast in seven dishes.

Dish A … we added sugar.

Dish B … we added cold milk

Dish C … we added warm milk

Dish D …we added sugar and cold milk

Dish E … we added sugar and warm milk

Dish F … we added sugar and very hot milk.

Dish G … just yeast. Nothing added.

Then the children were asked to PREDICT which dish the yeast would work best in.

The dishes were left for 30minutes.

This dish did the best. Which was it? What conclusions did we draw?Well, you need to try the experiment out for yourselves to find out because that is what ‘Jumble Fun’ is all about! Motivating children to be ‘hands on’

Learn and have Fun with Bubbles

Bubbles are so much fun and kids love them. It’s incredible too how often we come into contact with bubbles during our every day lives without even thinking about it. Bread making, whipping up cream, whisking egg whites, fizzy drinks, washing etc etc.

We see them and use them so often that we take them for granted.

But to children , they are MAGIC!

There is so much to be learnt from bubbles but to kids it’s all just good fun. A perfect example of learning through Play.

Why are bubbles different colours?
My kids loved this activity!
We half filled a bowl with water and added lots of soap to make masses of strong bubbles. Then we placed our hands under a pile of bubbles and walked around inside and out observing how the colours changed. Children will realise quickly what is happening but they won’t probably know the term ‘reflecting ‘ so this is a good  opportunity to introduce and explain.

Are bubbles always round?



No matter how you try the bubbles you blow will always be round because they are free. There is nothing pushing on them. But, look at the shape of the bubbles on a bubble print. There lots of bubbles are squashed together and so push each other into all kinds of shapes.  Can you make a square bubble?  With a bit of an effort yes!  Learn how on the link below:

Make some bread.  Yeast produces bubbles when it is given warmth, sugar and liquid. Make some bread using fresh yeast then they can appreciate the process.

So how do we get the air into the liquid?
Here are some good ways to demonstrate this:
Whipping   (cream and egg whites)
Blowing
Steam-like for Cappuccino.
Using a milk frother – .These little milk frothers are really good and providing the milk isn’t too hot Children can make themselves a frothy milk drink.

Early Learning
Of course, while your little ones are discovering bubbles they will also be learning basic scientific and mathematical concepts like temperature, weighing and measuring, density AND accumulating lots of new words.

I love really rough, dark, whole grain bread oozing seeds and nuts but nowadays either because of age or IBS, or probably both, my system does NOT like it and objects strongly. 

Unfortunately, most of the foods IT likes, I do NOT! 

So,  I’ve come up with a white Loaf which both of us can enjoy.  ( family and friends with ‘normal uncomplaining guts’ like it as well! ) 


It’s light, moist, tasty and keeps really well. It actually brings to mind the bread Heidi used to take to her Granma who found the  rough brown bread difficult to chew!   But, if you haven’t read HEIDI then you won’t know what I’m talking about! If you have, then you are probably as old as me! 

I use strong white flour and I like to crumble a Vitamin C (ascorbico acid) tablet into the flour as it speeds up the process but not absolutely necessary. I also always use fresh yeast. I just love to watch it frothing and the smell is divine. 

The olive oil should be Extra Virgin and allow three nice big tablespoons. 

The grated carrot seems odd I know but it adds moisture and colour and taste (but it definitely does NOT taste of carrot. Trust me! )

We don’t have an oven at Jumble House so I do have to bake the bread in the Breadmaker but that’s all I use it for as I like to knead the dough myself. If I had an oven I would definitely use that to bake the bread because the crust is infinitely better plus you can make interestingly shaped loaves and cobs and bread rolls.  

Anything else ….. only to say that kids love bread making and it is so good for their coordination and strengthens those little hand muscles in preparation for years of writing!  Real dough is better than playdough cause you can eat the results! White dough is also easier to manipulate than brown.  Get them making little plaited rolls and cobs and all kinds of animal shapes. 

Since I buy fresh yeast in twin packs I sometimes use the second cube mixed with sugar and warm water to blow up a balloon!  (The mixture poured into a plastic water bottle with the balloon over the neck).   It’s a good way of demonstrating just how and why the bread is rising and what makes those little air pockets.  There’s a fun video for kids on my channel showing this. Yummy, Yummy, Good for your Tummy Bread!

My very popular recipe. It can be made in a breadmaker if you must …….. but WHY? ?

After all, who can resist the feel of all that sticky gunge between the fingers and a kitchen transformed into a floury winter wonderland!

But with a little kneading that sticky gunge is miraculously transformed into a silky, elastic dough that is just heaven to squeeze and stretch into interesting creations.

Apart from the actual baking there's not much a child can't do when making bread. Use your own discretion. You know your child better than anyone.

Let them be creative. Let them adapt the recipe. Be prepared for a few strange outcomes …. it's better that they experiment … they will learn from failures. Just make sure that they see a failure as something positive and the start of a new product and not the end. This will probably be more difficult for you than them when faced with a floury kitchen! But then, that's important too. They need to learn how to clean up even if it takes twice as long!

Ingredients

Strong Flour. 500grams A mixture of wholemeal and Granary is good. The coarser the better. I like to add a little black Rye flour too.

Fresh yeast …. much more fun than the dried stuff in packets! (That doesn't erupt!)

One medium fresh juicy carrot. ( Definitely NOT a limp bendy one! )

Nuts! A small handful of walnut pieces or crushed hazlenuts or cashews or go mad and mix lots.

One teaspoon of runny honey or sugar.

Liquid … half and half water and milk.300 mls

VERY important …. 3 tablespoons of Virgin olive oil

2 level teaspoons of salt.

METHOD

Measure out the liquid . It should be tepid. Warm but not hot.

Crumble a cube or yeast into a mug. Add honey or sugar and cream together with a teaspoon.

Then pour on half the liquid. Stir then watch in fascination for about 15 mins. while bubbles began to surface.

If you can tear yourself away from the bubbly volcano this is the time to measure everything else into the largest bowl possible. (less mess).

At the point when the yeast threatens to spill over the top of the coffee mug pour it and the remaining liquid into the bowl.

Gunge lovers can then stick their (clean) hands straight in and get mixing. The more squeamish (adults) are allowed if necessary to initially draw the ingredients together with a spoon. Shame on you!!

Then turn out onto floury board or baking paper and knead and knead and knead till it's a soft and smooth as a baby's bottom!

Put back in the bowl. Cover with cling film and leave till double in size. About 60 – 90 minutes depending on how warm your kitchen is.

Then out it comes again for another good battering.

Then …. well the rest depends on imagination. Will it be a round cob or a pirate ship? A loaf or a teddy bear!

Whatever … place on a greased baking sheet and leave to rise again for about half an hour till its springy to the touch. At this point the oven needs to be turned on and preheated ( check own oven instructions for this and baking times).

The smell will be divine even if the outcome is not what was expected !
